DIY Carrot Cake Cookies & Easter Baskets For Fido!

Happy April Friends! Wow! Mako and I cannot believe this year had just flown by! I mean January lasted forever, and now it’s April!! Next month Mako and I will be aunties and OMG it’s so hard to wrap our heads around! But then again, warmer temps are here and we are freaking out about that!! Because let’s be real, we all know what that means!! Puppy pools, dog parks, lake days, and more! Yes! Makos losing her mind with excitement, heck, the weather got warm, and mako found her voice! She BARKS now. Yeah, literally. My dog who never in her life barked, now barks. I’m amused, my moms amused, were all losing it. It’s great!

Carrot Cake Bites (Easter Cookies OMG)

Prep Time 45 minutes

Bake Time 30 minutes

Ingredients:

2 Cups Whole Wheat Flour (All Purpose Flour, Coconut Flour, etc. is also fine! Definitely up to your discretion, but as you can see I alway use whole wheat, oh and target (market pantry) now sells a huge bag for like $2!)

1/4 cup Ground Flax Seed

1/2 Cup Shredded Coconut

1 Cup Rolled Oats

1 Tbs Cinnamon

1 Cup Shredded Carrots ( I used a Food Processor)

2/3 Cups Pumpkin Puree (off brand is fine, organic can be really juicy so be careful there)

1 Egg

Instructions:

I measured out all of my ingredients first this go round so I could get a feel for what I needed. you don’t have to do this, because I have done that prior and this should be pretty accurate!

  1. Pre Heat Oven to 350 Degrees

  2. Mix Dry Ingredients: Flour, Flax Seeds, Coconut, & Oats in a large bowl.

  3. Mix Wet Ingredients: Egg, Carrots, and Pumpkin Puree in smaller Bowl.

    1. Side Note- I made an additional side of pureed carrots, for added wet ingredients. Depending on your dough you may feel as if you need something to hold your dough together, feel free to add more pumpkin puree, or combine, carrots, water, and olive oil to make a small batch of pureed carrots. (not necessary though!)

  4. Combine Wet ingredients and Dry ingredients to Form dough.

  5. Optional: If you have extra flour roll out dough and cut out shapes with cookies cutters. I bought the cutest Easter cutters at Hobby Lobby for like $2 with a coupon!! Otherwise, roll dough into balls and space two inches apart. Flatten each ball with a fork. I would say depending on dogs size and your treat size preference, determine the best size. I didn’t opt for this, because my cutters were large enough to make treats enough treats. However, my two previous DIY recipes, show how its done!

  6. For cookie cutter sized treats Bake for 30 minutes. For larger dough balls as pictured, approximately 40min bake time. Be mindful as you bake. You want them to be cooked all the way through, a little hard is fine!

  7. I also bought some cream cheese ( cause what’s carrot cake with out cream cheese frosting!!) to top the cookies with, I only topped a few, because it doesn't harden… If that makes sense. I also used red & blue food coloring to get a cute Easter purple! Check it out below!

  8. Store in Fridge for up to 7-14 days. Until eaten. Mako ate hers in about 3 weeks in fridge, and they were fine! (I have updated this from our last blog!)


As always I’m gonna give you dog mom and dads the play by play, so you can perfect this carrot cake cookies!! These were pretty awesome to come up with, mostly because the only thing I knew about carrot cake… was carrots. I didn’t even do research on carrot cake. I went with my guts on this one. I went with my taste buds. Or more so my dogs sense of smell. Did you know that a dogs sense of smell is 10,000 times more important than there sense of taste! What?! So if a cookie smells good, a dogs going to actually salivate more for an item over one that doesn't smell good. Basically what I’m saying is a dog is more likely to crave an item over its smell than its taste. So why not make them both! While also making it have added health benefits!!

As always I like to talk about ingredients chosen! as I mentioned before, I wanted this to be a cookie with a bite to it, and cinnamon smell that popped off the cookie! And let me tell you, this cinnamon did the trick!

Not only is Cinnamon beneficial to catch a dogs attention by there sense of smell, but cinnamon is found to include anti inflammatory properties as well as the ability to stop bacterial growth! It’s also been found to help regulate blood sugar in overweight or diabetic dogs!! Who knew?! Can you say winning?? Hello, add this to all our cookies??

I also chose ingredients like pumpkin, flax seed, coconut, and oats because they’re rich in fiber and great for digestion! Cream cheese, is kind of an added bonus, and isn’t required for this recipe! If you want to make treats with icing, feel free to use cream cheese, if not, go without!

Below, I’m featuring Mako’s mini Easter basket and what I chose to get her all set for the Big Bunnies Arrival! I found all these goods for under $10 and most were under $3 at Target! Love me a good deal!

So I got the basket, the eggs, and the fluff at Target in the Easter Section for under $3 each. I think it was like $6 or $7 for the whole thing.

I then found the bunny toy in the Bark Spring collection at Target! Perfect Addition and only $7.99!! OMG they also have the cutest spring toys, like watermelon, pie, and picnic baskets! In LOVE!

Within the Easter Eggs, I added some local treats I picked up from a brewery, that are made from the leftover beer grains of local breweries in North Carolina! Three years. Three years ago, October 17th, I made one of the best decisions I have ever made. I adopted the most wonderful, smart, beautiful, and insane pup, my now CFO (Cheif Fido Officer) of The Leashed Life, Mako! Three very fast past, wild, yet very much enjoyable years.
